One Sheet Pan Salmon Dinner

Happy Friday Everyone! You made it to the weekend! I for one am so excited for this weekend because I am going wedding dress shopping :) AHH it is starting to feel so real and I love it. I am meeting all the lovely ladies in my family plus a couple of friends in Atlanta to find my dream dress. I am so excited everyone can come together and experience this with me. 

This trip also came at a great time because so many of my family members are being evacuated for Irma. I cannot believe we are in the midst of another hurricane and it just breaks my heart. Charleston is prepping for the worst, so my family and friends are coming to Atlanta and then heading to Charlotte with us to wait out the storm. While I hate the circumstances, I am still so excited to spend some time with everyone and catch up! Stay tuned because I will definitely be keeping an eye on the best ways to help all areas affected, and lets not forget Texas is still in so much need. I am trying my best to spread anything I can give out evenly because there are SO many people out there who need positivity during this horrible time.

To prep for my dress shopping, I have been trying to keep things light this week and this salmon dinner really hit the spot. I mentioned early how we are trying so hard to get more veggies in our diet and when we went to the store this past weekend we mayyyy have over bought. Luckily, we came up with the idea to do a quick roasted veggie and salmon dinner. Seriously so easy and you can season this so so many ways. We kept it simple with lemon, olive oil and salt/pepper, but I will definitely be making this again teriyaki style :)



Veggie Medley (diced)

2 Salmon Filets

2 Lemons, Juiced

1 Lemon for Slices

2 tbsp Olive Oil

Salt and Pepper to taste



1. Preheat your oven to 375 degrees.

2. Dice your veggies and place on the lined baking sheet. 

3. Place your salmon skin side down on the lined baking sheet. Top each piece of salmon with lemon round slices.

4. Squeeze the juice of the two lemons all over the veggies and salmon.

5. Drizzle the olive oil all over the veggies and salmon then season with salt and pepper to taste.

6. Bake for twenty minutes and then plate! YUM!
