Taco Stuffed Sweet Potatoes
TACO TUESDAY! We are not strangers to taco Tuesday in our house (kind of celebrate every week, not sorry), but sometimes we get a little burnt out on the traditional taco. When I did Whole30 back in the spring, tacos were out of the question for me, but that did not mean my Mexican cravings magically went away. Instead, it forced me to get a little creative and come up with ways to give me that Mexican fix without the whole SWYPO situation. I fell in love with these taco stuffed sweet potatoes because they have ALL of my favorite taco toppings and the sweet potato gives me the fuel my body needs after a long day. Can't beat that! These are so stinkin' customizable so its guaranteed to be a family fav!
4 sweet potatoes
1/2 pound ground turkey
Black Beans (omit if on Whole30)
Corn Salsa (omit if on Whole30)
Cheese (omit if on Whole30)
...And so many more! You choose your favorites :)
1. Preheat oven to 375. Wash and dry sweet potatoes and lay them on a baking sheet. Roast for 40 minutes in the oven until fork tender.
2. Brown your ground turkey on the stove with a little olive oil.
3. Create your taco stuffed sweet potatoes by stuffing each potato with the cooked ground turkey and then top with your favorite toppings. Enjoy!
