Sweet Potato Toast Two Ways

I know I have mentioned my beloved sweet potato toast many times on here, but it has seriously been a life savor (Whole30 or not). I absolutely love slicing these ahead of time and keeping in the freezer so I can put together a quick breakfast or snack. You can really customize this however you want but below are my two favorites.

 

Ingredients:

1 sweet potato

1/2 avocado

3 cherry tomatoes

1/2 banana

1 tbsp almond butter

Olive Oil for drizzle

Cinnamon for sprinkling

 

Directions:

1. Thinly slice your sweet potato length wise. Place most in a ziploc bag to freeze, but set aside two pieces.

2. Top one with smash avocado, cherry tomatoes sliced halfway, drizzle of olive oil and sea salt.

3. Top the other with almond butter, sliced banana and a sprinkle of cinnamon.
