Pickled Veggie Salad

I am in love with this side dish for summer, especially paired with a flavorful fish or meat. This side dish comes together within 10 minutes and has such a great tangy flavor. I know I have loved having this on hand for BBQ's. Sometimes you just need some pickled veggies to cut the richness of marinated meat at a cook out:)

 

Ingredients:

1 cup cherry tomatoes

1 cucumber 

1/2 red onion diced

2 tbsp apple cider vinegar

1 tbsp maple syrup

Salt and Pepper to taste

 

Directions:

1. Halve your cherry tomatoes and dice your cucumber/onion.

2. Add in your apple cider vinegar, maple syrup and salt/pepper into a bowl and whisk.

3. Place your veggies in the bowl with the dressing and toss until coated.

4. Set in the fridge for 10 minutes and then serve.
