Cashew Chive Cream Cheese

I absolutely love a good lox bagel, but really wanted to find a way to cut out the cream cheese. This cashew cream cheese has such a perfect creamy consistency and we have been loving it with our smoked salmon on top of the sweet potato buns. It is a perfect addition to your everyday breakfast or even serve for a fancy brunch at home with friends!

Ingredients:

1 cup raw cashews

1/2 cup water

2 tbsp chives

Salt and Pepper to taste

 

Directions:

1. Soak the cashews and water for 2 hours. 

2. Drain the water and add the soaked cashews into your food processor. 

3. Add in the chives and salt/pepper and blend until smooth.

4. Store in an airtight container and spread on your favorite breads/crackers.
