Two Perfect Sides for Grilling Season

As I mentioned in my previous post, Elizabeth and I came together to bring you some of our favorites during grilling season just in time for Memorial Day! Elizabeth brought us a beautiful grilled fish and I am here to share two of my favorite side dishes. These were always a staple in our house growing up, but I decided to clean them up a little bit to make both gluten free!

Pasta Salad:

1 box Banza GF Pasta, cooked and chilled

2 gloves of garlic minced

1/4 cup minced onion

1 cucumber sliced and diced 

1/2 cup cherry tomatoes diced

1 carrot grated 

1/2 cup parm cheese

Juice of two lemons

1/4 cup olive oil 

1/2 cup green olives chopped

Salt and Pepper to taste

 

Directions: Mix all ingredients in a large bowl and chill in the fridge before serving.

 

Potato Salad:

3 large potatoes cubed and roasted in the oven on 450 for 20 minutes

3 eggs hard boiled and diced

2 tbsp mustard 

2 tbsp homemade mayo

2 tbsp diced onions

1 tbsp fresh dill

Salt and Pepper to taste

 

Directions: Mix all ingredients in a bowl and chill before serving.
