Spicy Salmon Bowls

We needed a quick dinner this week and decided lets just toss all the veggies we had on hand in a bowl with some protein and an AMAZING sauce. Seriously one of the easiest dinners we have done in forever. Y'all this one is a must try!

 

Ingredients:

2 4oz salmon filets

2 cups cauliflower rice

1/2 cup broccoli florets 

1/2 cup cherry tomatoes

1 zucchini 

1 carrot sliced and diced 

3 tbsp coconut aminos 

1 tbsp chili paste 

2 tbsp ghee

Salt and Pepper to taste

 

Directions:

1. Preheat oven to 400. Place salmon in a oiled baking dish and place in the oven for 10-15 minutes until cooked. Flake your salmon into bite size pieces with a fork and set aside. 

2. While your salmon cooks, add in all of your veggies and cauliflower rice into a skillet and sautee with the ghee until tender.

3. Add in your coconut aminos and chili paste and continue to cook for another 5 minutes. 

4. Place your veggies in a bowl and top with your flaked salmon. Enjoy!
