Whole30 Mayo and Pesto

Homemade condiments and sauces are a Whole30 staple. This week I started by making homemade mayo and pesto to keep us going on this journey, but I cannot wait to make so many more recipes for you all! Thinking ketchup and hot sauce next :)... 

Anyways here are two staples for Whole30. Hope you love them!

 

Mayo:

  • 1 large brown egg (at room temp)
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 cup avocado oil
  • Salt and pepper to taste

In a blender, add in your egg, lemon, ACV and salt&pepper. Blend on low and slowly pour in your avocado oil in as this blends. You will see a thick sauce begin to form. Store in a air tight glass jar in the fridge for up to a week. Enjoy!

 

Pesto:

  • 2 cups fresh basil leaves 
  • 1 cup raw almonds
  • 1 cup avocado oil
  • salt and pepper to taste

In a food processor, add in your basil, almonds and salt&pepper. Pulse until finely chopped and then pour in half of the avocado oil. You want the consistency to be thick so add from here as needed and continue to blend. Keep in an air tight container in the fridge or freezer. Enjoy with some chicken or veggies :)
