Lemon Almond Chicken Salad
One of my favorite lunches growing up was this lemon chicken salad my mom bought from one of the local grocery stores. I wanted to recreate it here for you all because its such an easy recipe and can be used for sandwiches, salads or even as a snack with some crackers. Hope you like it!
1 pound chicken breasts
1 cup mayo
1/2 sliced almonds
1. Place chicken breasts with the juice of one lemon and 1/2 cup of water in the slow cooker on high for 3 hours until fork tender and cooked all the way. Shred the chicken and let cool.
2. In a large bowl, mix the cooled chicken, mayo, juice of the remaining lemons and almonds. Mix thoroughly and chill in the fridge.
3. Serve on a sandwich, bed of lettuce or with crackers.
