Chickpea and Spinach Falafel Bowls

We have been experimenting with meatless dinners and loving mediterranean flavors lately. That is how this new favorite dinner bowl was born! Confession, I used our new favorite lunch spot, Yafo Kitchen, in order to come up with the flavors of this bowl. It made for a perfect dinner and the leftovers held up so well for a light salad at lunch :)

Chickpea and Spinach Falafels:

1 can chick peas rinsed and patted dry

1 cup spinach

1 lemon squeezed 

1 egg

1/2 cup almond flour 

Salt and Pepper to taste 

Optional Bowl Ingredients: Mixed greens, brown rice, feta, red onion, greek olives, pepperoncini peppers, artichoke hearts. tomatoes, cucumbers and hummus. 

Sun Dried Tomato Dressing:

1/4 cup sundried tomatoes 

2 tablespoon pepperoncini juice from jar

1/2 olive oil 

Salt and Pepper to taste

 

Directions: 

1. Preheat oven to 400 degrees.

2. In your food processor combine all falafel ingredients and mix until pureed. 

3. Using a spoon, scoop out a spoonful at a time of the falafel batter and place on a oiled cookie sheet or in a mini cupcake pan. Continue until all of the batter is gone.

4. Bake in the oven for 10-15 minutes until golden brown on the outside.

5. While your falafel cooks place all of your dressing ingredients in your blender and blend until a light red color forms. 

6. Form your bowl with your rice or lettuce + optional ingredients. Place falafel on top and drizzle with your dressing. SO easy and flavorful!
