Spaghetti Squash Pie

We are trying to implement meatless Monday in our household to force us to explore with more vegetables and also eat more sustainably. That is when this amazing, comforting dish came to life :) Check out the recipe below for my version of a spaghetti squash pie!


1 large spaghetti squash

2 zucchinis 

1 cup sliced white mushrooms

2 cloves garlic

1 cup fresh spinach

1 large white onion

1/2 cup shredded mozzarella 

1 cup marinara sauce of your choice (look for sugar free!)



Heat oven to 400 degrees fahrenheit. Cut spaghetti squash lengthwise and scoop out the seeds in the middle. Drizzle with olive oil and season slightly with salt and pepper. Place on a baking sheet and put in the oven from 20-25 minutes until soft.

While your squash cooks, dice onion, garlic, zucchini and mushrooms. Sautée in a large pan on the stove top with olive oil until tender. Transfer cooked vegetables into a large mixing bowl. Add marinara sauce to the veggies and mix. 

Take your cooked spaghetti squash out of the oven. Wait a few minutes for it to cool off and then scrape with a fork to get a spaghetti like consistency. Take the shredded squash and add to your mixing bowl. Mix until all the squash is coated with your sauce.

Transfer your mixture to a casserole dish and bake in the 400 degree oven for 10 minutes. Take out and top with your shredded mozzarella. Broil in the oven on high for another 5 minutes until cheese is bubbly and melted. Take out of the oven and let sit for 5 minutes to cool, then serve!
