Beef Barbacoa Taco Salad

Lately it has been our goal to find recipes we can repurpose. It makes grocery shopping and meal planning so much easier and since we seem to have a holiday party ever other day, it makes dinners super quick. It is no secret that mexican flavors are some of my favorite so I was so excited with how this salad turned out. We put together some veggies and slow cooker beef to come up with this flavor packed salad. 

 

P.S. You can use this beef for so many things. We love it in rice bowls, in tacos, quesadillas or just simply by itself with a little avocado and roasted veggies on the side! So versatile and always delicious. 

Beef Barbacoa:

1 pound sirloin steak (round steak or beef shoulder work as well)

1/4 cup of orange juice

1/4 cup of sriracha hot sauce

2 tbsp apple cider vinegar

1 lemon, juiced

2 tbsp chili powder

2 tbsp onion powder

2 tbsp garlic powder

1 tbsp maple syrup 

Salad:

You can play around with these salad flavors with any veggie you have on hand, but here is what we went with tonight

1 bunch of kale, chopped

1/2 white onion, diced

1/2 cup cherry tomatos, halved 

1 avocado, diced

1/2 can of black beans, drained

1 cup shredded mexican blend cheese

 

Optional: Salsa and Greek Yogurt on top

 

Throw all of your ingredients for the beef barbacoa into your slow cooker and set on low for 6-8 hours. It should literally fall apart with your fork as you shred it. Put all of your salad ingredients in a large salad bowl and top with your beef. Add some salsa and greek yogurt (optional) and that is it! Hands off and healthy -- my kind of dinner :)
