Quinoa and Chicken Stuffed Avocados

I always forget how busy the holiday season can be. It feels like P and I always have something going on and finally had a moment to make a delicious and healthy dinner. I love this meal because it is so easy to put together and allows us to spend some quality time together before another hectic week. We tried a version of this dinner out at a restaurant here in Charlotte and instantly fell in love. I have been dying to recreate it for you all because it is such a perfect idea for lunch or dinner and is something that can easily be packed for a lunch on the go. You have to give this one a try. I just know you all will love it!

Serving for 2:

2 avocados halved and peeled

1/2 cup of quinoa 

1 roma tomato 

1 lemon

1 tbsp olive oil

1 chicken breast 

Salt and Pepper to taste

Optional Sauce on top:

1 tbsp mayo

1 tbsp sriracha

1 tbsp coconut aminos

 

Preheat your oven to 350 and put the chicken breast in the oven for 15-20 minutes until cooked through. Add 1 cup of water to a small pot and bring to a bowl. Put your quinoa in and let it simmer until the water is completely evaporated and the quinoa is soft. Mince the tomato and add to the cooked quinoa. Half and squeeze the lemon into the quinoa and add a drizzle of olive oil salt and pepper to taste. Place the quinoa in the fridge so it can cool down as you being to plate your avocado. When the chicken is baked shred it with a fork and knife. Half your avocados and remove the pits and skin. Place on your plate then top with a scoop of the chilled quinoa. Place some of the shredded chicken on top then drizzle the sauce on top. Such an simple meal!!
