Turkey Meatloaf

A couple years back we got these AMAZING meatloaf from Whole Foods. I have been trying to recreate it as a gluten free version and I have finally found a recipe full of flavor minus all of the guilt for yall :)

Turkey Meatloaf:

1 pound lean ground turkey

1 sweet potato, peeled and grated

1 red pepper diced

2 cloves garlic minced

3 scallions chopped

1 large brown egg

1 tbsp onion powder

1 tsp crushed red pepper

1 tbsp whole foods poultry seasoning

1/3 cup crushed Mary's Gone Crackers

1/4 cup almond milk


Preheat oven to 400. Crush your Mary's Gone Crackers with your hands and place in a bowl with the almond milk to soak. Peel your sweet potato and grate with your cheese grater. Dice your red pepper, chop the scallions and mince your garlic. In a large bowl combine the turkey, grated sweet potato, red pepper, scallions, garlic, egg and seasonings. Mix together with your hands. Squeeze the crushed crackers to remove all of the almond milk and add the soaked crackers into the turkey loaf mix. Mix together one last time and then place turkey loaf into a loaf pan coated with avocado oil. Bake in the oven for 25-30 minutes until turkey is cooked through. Enjoy with your favorite hot sauce and ketchup.
