Rosemary and Garlic Sweet Potatoes
With the New Year quickly approaching, we are playing around with some healthy sides to go with dinner. These rosemary and garlic sweet potatoes are such an easy side and can also be great home fries for breakfast or go on top of a hearty salad. I absolutely love multi-purpose recipes :)
2 sweet potatoes, peeled and cubed
2 tbsp dried rosemary
2 garlic cloves infused into avocado oil
Preheat oven to 400. Crush the garlic cloves and soak in 2 tbsp of avocado oil. Peel and cube your sweet potatoes. Drizzle the garlic infused avocado oil over the sweet potato cubes. Sprinkle rosemary over top and toss sweet potatoes on a baking sheet. Bake in the oven for 20-25 minutes until potatoes are cooked through and slightly crispy on the outside.
