Oatmeal & Almond Butter Cookies

I typically am not a huge fan of sweets. I know I am one of the few, but put a bag of chips or sweets in front of me and 10/10 I will go for the chips. These cookies are the exception! The almond butter gives them a nutty flavor that gives hints of sweet and salty. Dessert usually comes with a little bit of regret because there is a connotation it has to be bad for you. That is absolutely not the case! These cookies are packed with great ingredients so you don't have to feel guilty when you need to satisfy your sweet tooth. 

Oatmeal & Almond Butter Cookies:

2 large brown eggs

1/2 cup coconut sugar 

1 cup almond flour

1/2 cup rolled oats

1 tsp baking soda

1 stick unsalted grass fed butter (room temperature)

1/4 cup smooth almond butter

1/4 cup cacao nibs or dark chocolate chips **optional

 

Preheat the oven to 375 degrees fahrenheit. In a bowl, combine the butter, eggs, almond butter and coconut sugar. With a whisk or hand mixer, mix until smooth. Slowly combine the almond flour, baking soda, rolled oats and cacao nibs or dark chocolate chips (if using) until they are fulling incorporated into the wet ingredients. Using a spoon, make little balls with the dough and place on a baking sheet lined with parchment paper or reusable baking mats. Spread each cookie out about 1 inch apart to make sure they have room to expand in the oven. Place in oven and bake for 10-15 minutes or until cookies are golden brown. Enjoy with a glass of milk of your choice :)
